  • Description:

    With canned tuna recipes like these patties, you’ll be able to the most of your wellbeing and your time with a quick weeknight meal. The health benefits of this fish are so great that some recommend eating it twice a week - so you can enjoy tucking into this guilt-free dish. Serve them on fresh burger buns or simply enjoy them on their own with a side salad of your choice. If you like a little heat, you can add chopped green chilli to taste.

  • Ingredients:

    1 can (410 g) Rhodes Chick Peas in brine, drained
    2 cans (170 g each) tuna in brine, drained

    3 tbsp. mixed flat-leaf parsley and coriander leaves, chopped
    65 ml onion, finely chopped
    2 tbsp. lemon juice

    65 ml breadcrumbs
    Salt and coarsely ground black pepper
    1 tbsp. sunflower oil

  • Method:

    1. Place the chickpeas in a bowl and mash lightly.
    2. Add the tuna and mix well.
    3. Add the herbs, onion, lemon juice and breadcrumbs and season to taste.
    4. Shape the mixture into even-sized patties.
    5. Heat the oil in a non-stick frying pan and fry the patties on both sides until golden.
    6. Serve.
