MATOKE
  • Description:

    There’s nothing quite like matoke! With just two ingredients, this dish is truly budget friendly! Be sure to steam the matoke for at least 20 minutes.

  • Ingredients:

    10 to 20 matoke (green cooking bananas) (may be substituted with plantains)

    5 to 7 cups water (depending on the quantity of matoke/plantains)


       

  • Method:

    1. Peel the matoke or plantains and wash them in cold water. Put into a pot, add water, cover and bring to the boil.
    2. Boil for 10 minutes, then reduce the heat and continue to sommer. Mixture will turn yellow when well-cooked.
    3. Drain the water and mash the matoke or plantains with a wooden spoon.
    4. Wrap the mashed food in foil and place in a steaming basket.
    5. Place the steamer inside a large pot and add water.
    6. Steam on low heat for 20 minutes. Serve while hot.
