• Description:

    It’s back-to-school time again and we are giving you great lunch ideas to get the year started strong. Make pasta salad and swop out the toppings to keep your little one excited for lunchtime

  • Ingredients:

    ½ avocado; sliced

    200 g cooked protein (chicken, ham, prawns, eggs or cheese)

    ½ lemon; juiced

    400 g pasta

    4-5 tbsp. fresh pesto

    1 tbsp. mayonnaise

    2 tbsp. Greek yoghurt

    200 g mixed cooked & chopped veg (green beans, carrots, baby marrow)

    100 g cherry tomatoes; quartered

  • Method:

    1. Cook the pasta as per cooking instructions on the packaging until it is al dente. Drain, tip in a bowl, mix in the pesto and leave to cool.
    2. Stir in the yoghurt, lemon and lemon juice and your choice of veg and protein.
    3. Top with cherry tomatoes and avocado slices.
