BUTTERNUT FLAPJACKS
  • Description:

    Kids can be fussy, and at their young age, they enjoy meals that are simple to prepare, exciting, and taste YUMMY! This delectable Butternut Flapjack recipe will keep them full, happy, and satisfy their little tastebuds.

  • Ingredients:

    1 banana; peeled and mashed

    1 cup (250 ml) steamed and mashed butternut (can also use pumpkin)

    ½ cup (125 ml) flour

    ½ tsp. (2.5 ml) cinnamon

    1 tsp. (5 ml) baking powder

    2 eggs

    1 tbsp. (15 ml) milk 

    Coconut oil, for frying

    For Decorating

    Few slices mozzarella cheese

    Strawberries

    Blueberries 

  • Method:

    1. Place banana, butternut and eggs into a bowl and mix together well.
    2. Sift the flour, cinnamon and baking powder together and fold into the mashed butternut mix. If it’s still too thick, add the milk to loosen a little, but batter needs to be of dropping consistency.
    3. Heat a little coconut oil in a frying pan and drop spoonfuls of batter into the pan and fry gently for about 1-2 minutes on each side or until golden brown and cooked through.
    4. Remove from pan and cool completely.
    5. Cut out various shapes using the sliced cheese, strawberries and blueberries to create the cow and fish flapjacks as a fun school lunchbox surprise.
