METHOD:

1. Crush peppermint crisp chocolate and set aside. Allow the ice cream to soften at room temperature and mix in half of your crushed chocolate mixture. Spread it roughly into a rectangular tin. Freeze overnight.
2. Cut squares of the ice cream mixture out and sandwich together with a Tennis Biscuit on each side.
3. Roll the ice cream sandwich into the chopped Peppermint Crisp, coating all the edges. Freeze in a container until ready to serve.

Tip: For extra indulgence, add caramel treat to your ice cream mixture before freezing.
