Smoked Chicken Wings
with Apple sauce

    These chicken wings are quick as a wink and fantastic as snacks or mains. Spiced, sauced and specially smoked, they are given a royal preparation – and it shows. The seven ‘secret’ herbs and spices in this recipe make all the difference and intertwine beautifully with the smoky taste, with an aroma that will quickly draw your friends and family to the dinner table. Serve with the easy apple sauce, but just make sure there’s enough to go around, it tends to finish up quickly. Makes: 4 servings. 
Cooking time: 20 minutes.

  • Ingredients:

    Chicken
    12-15 Chicken wings, cleaned and patted dry
    Jimmy’s braai sauce (mix with half the apple sauce)
    10 ml (2 tsp.) ground ginger
    10 ml (2 tsp.) ground coriander
    7 ml (1½ tsp.) ground black pepper

    7 ml (1½ tsp.) ground cinnamon
    7 ml (1½ tsp.) ground turmeric
    6 ml (1¼ tsp.) ground nutmeg
    5 ml (1 tsp.) ground allspice

    For smoking
    500 ml (2 cups) rooibos leaves (with buchu or honeybush), slightly moistened with water

    Apple Sauce
    2 cans (425 g each) pie apples
    30 ml (2 tbsp.) honey
    Lemon juice and grated rind

     

  • Method:

    Chicken

    1. Mix all the spices.
    2. Put the wings in a large plastic bag. Add the spices and shake to coat the chicken.
    3. Set aside for at least 30 minutes at room temperature or overnight in the fridge.
    4. Prepare a fire in the kettle braai. When the coals turn ash white move them to one side of the braai. Sprinkle 500 ml moistened rooibos leaves over the coals. Put the wings on the grill but not directly above the coals.
    5. Cover the braai and smoke the wings for 30 minutes.
    6. Open and braai the wings over the coals until done, basting with the braai sauce mixture.
    7. Serve with the remaining apple sauce.

    Apple Sauce

    1. Blitz the pie apples in a food processor until smooth.
    2. Add the honey and lemon juice and rind to taste.
