KOO Bean and Feta Salad
with Radishes in a Sweet and Sour Dressing

    Packed with protein and plenty of punch, this healthy bean salad’s secret lies in its divine sweet and sour dressing. The feta flavours work exceptionally well alongside the butter and kidney beans, while the radishes add some extra texture and a bit of kick. Whether you’re planning on packing it for lunch or to serve it as a braai side, feel free to prepare this dish in advance as it helps the taste to comes into its own. Serves: 4 - 6

  • Ingredients:

    Salad
    410 g KOO Butterbeans in Sweet Tangy Sauce
    410 g KOO Red Kidney Beans, drained and washed
    125 g feta cheese
    5 radishes, thinly sliced
    50 ml fresh coriander, chopped

    Dressing
    125 ml sunflower oil
    2 ml ginger, grated
    15 ml All Gold Super Fine Apricot Jam
    2 ml chilli flakes
    Rind and juice of 1 orange

     

    30 ml fresh parsley, chopped
    Pinch of salt for seasoning
    Freshly ground black pepper to taste

  • Method:

    1. Toss together the KOO Butterbeans and KOO Red Kidney Beans.
    2. Fold through the feta cheese, thinly sliced radishes and coriander.
    3. For the dressing, in a small mixing bowl, whisk together the oil, grated ginger, apricot jam, chilli flakes, orange rind and zest and chopped parsley.
    4. Season with salt and pepper to taste.
    5. Pour the dressing over the salad when serving or reserve on the side as needed.

      • Make salad one day ahead of time, as the flavour matures overnight.
