Creamy Mashed Potatoes
with KOO Lentils

    Probably one of the most loved potato recipes, mash is a versatile side and comfort food at its best. This variation adds an extra health boost with lentils, while leeks give it a special touch of flavour. These creamy mashed potatoes are great with saucy meat dishes and also work really well with some grilled fish. Serves: 4 - 6

  • Ingredients:

    5 large potatoes, peeled and diced
    125 ml cream
    65 g butter or margarine

    1 can (410 g) KOO Lentils in Brine, drained

    150 g leeks, sliced

  • Method:

    1. Half fill a medium-sized, heavy-based pot with cold water and salt.
    2. Add the diced potatoes to the pot and bring to the boil.
    3. Once the potatoes are cooked through and soft enough to mash, remove from the water and transfer to a medium-sized mixing bowl.
    4. Mash the potatoes until smooth with a potato masher.
    5. Stir in the cream and 50 g of butter.
    6. In a heavy-based frying pan, heat 15 g of butter and fry off the leeks.
    7. Fold the leeks through the KOO Lentils.
    8. Fold the lentil mixture through the mashed potatoes.
    9. Season with salt and pepper to taste.



    Variations, hints and tips:

    Avoid over-mixing the mashed potatoes as they may become sticky.
