  • Description:

    This easy and delicious cake recipe is perfect for if you’ve run out of Father’s Day gift ideas or if you’d just like to wish dad a happy Father’s Day in the most delicious way.

  • Ingredients:

    For the cake
    170 g caster sugar
    170 g butter or margarine, plus extra to grease
    3 large eggs
    170 g self-raising flour

    1 ½ tsp. baking powder
    1 tbsp. instant coffee (add more if you like it strong) dissolved in 1 tbsp. hot water

    For the icing
    225 g icing sugar

    100 g butter or margarine
    1 ½ tbsp. instant coffee dissolved in 1 tbsp. hot water
    Strawberry jam (optional)
    Chocolate or nuts to decorate (optional)

  • Method:

    1. Preheat oven to 160 C. Line and grease 2 x 18 cm baking tins. Add the sugar and butter to a bowl and whisk until very fluffy and pale.
    2. Whisk the eggs in a mug with a fork, then add them gradually to the mixture with 1 tbsp. of flour, gradually adding until the eggs have been fully combined into the mix. Add the rest of the flour and the baking powder and fold it in gently.
    3. Add the dissolved coffee to your cake mixture, then divide into the tins and bake for 25 – 30 min. or until a skewer inserted into the middle comes out clean. Leave to cool in the tin until no longer hot to touch, then turn out onto a wire rack to cool completely.
    4. For the icing, cream the icing sugar with the butter, then add the dissolved coffee. Whisk, then cover and put aside until you’re ready to ice.
    5. Once the sponges have completely cooled, spread half the icing on the bottom of one (leaving the rest for the top). Spread the strawberry jam on the bottom of the other, if using. Sandwich together and spread the remaining icing on top. Decorate with your choice of toppings.
