Chicken & Corn
  • Description:

    Nothing warms the soul more on a cold winter’s day than a steaming bowl of hearty soup. Try this delicious chicken soup recipe with corn and butternut and watch as everyone keeps coming back for more.

  • Ingredients:

    4 chicken pieces, skin removed

    salt and freshly ground black pepper

    30ml (2 tbsp.) olive oil

    2 onions, sliced

    4 fresh thyme sprigs

    2 litres (8 cups) chicken stock

    250 g butternut, diced

    2 cans (400 g each) sweetcorn, drained

    fresh herbs (optional)

  • Method:

    1. Season the chicken with salt and pepper and heat the oil in a saucepan. Fry the chicken until brown and set aside.
    2. Fry the onions with the thyme until golden.
    3. Return the chicken to the saucepan, add the stock and simmer until the chicken falls off the bone.
    4. Remove the bones. Add the butternut and sweetcorn and simmer until done. Season with salt and pepper.
    5. Spoon into bowls, sprinkle fresh herbs over the top (if using) and serve with toast.
