CHAKALAKA
BEEF BURGER
  • Description:

    Make your own African delicacy with this chakalaka beef burger recipe.

  • Ingredients:

    Beef Patty
    800 g minced beef chuck
    2 egg yolks
    5 ml dried mixed herbs
    5 ml Worcestershire sauce
    Salt and freshly ground black pepper
    30 ml sunflower oil

    Chakalaka
    1-2 tbsp. vegetable oil
    1 onion; finely chopped
    3 garlic cloves; grated
    ½ tbsp; ginger, grated
    2 red or orange chilli peppers; finely sliced (remove seeds for a milder version)
    2 tsp. curry powder
    1 tsp. turmeric

    1 tsp. paprika
    3 tomatoes, skins removed and finely chopped
    1 cup warm water
    3 cups carrots; grated
    3 cups cabbage; finely shredded
    1 tsp. white or red wine vinegar
    Salt and pepper

     

  • Method:

    1. Place the beef mince into a bowl.
    2. Add the egg yolks, mixed herbs and Worcestershire sauce.
    3. Season the mince with plenty of salt and pepper.
    4. Mix the ingredients together using a wooden spoon or by hand.
    5. Once the mixture is well blended, divide into four equal portions and shape into patties.
    6. Brush the patties with the oil.
    7. Heat a non-stick frying pan and grill the patties.
    8. Turn the patties over so that they cook evenly on each side.
    9. Grill until cooked to your liking.

      Chakalaka
    10. Heat the oil in a heavy-based pot.
    11. Add the onions and cook over a low heat for 10 minutes until tender and translucent.
    12. Turn up the heat and add the garlic and ginger. (Add more oil if needed.)
    13. Fry for 2 minutes.
    14. Add the curry powder, turmeric and paprika and fry for another 2 minutes.
    15. Add the chopped tomatoes and 1 cup warm water.
    16. Cook over low heat for 7 minutes.
    17. Add the carrot and cabbage, stirring well (add more water if needed).
    18. Cook over low heat for about 10 minutes until all the ingredients are soft. Season with vinegar, salt and pepper. Serve warm.

      To serve:
      Slice and butter the hamburger buns. Divide the lettuce among the bun bottoms and place a few tomato slices on each. Place a burger patty on top of each and top with a generous spoonful or two of chakalaka.
